I thought l would share with you all a family treasure, a recipe that not only is delicious but holds a special place in our hearts. Gran's Mucnhie Slice.
We have many fond memories of receiving our little goodie bag of Munchie slice for the drive home from visiting Gran.
At first she would put it in a Tupperware container but as time went on and the containers weren't returned (opps!) it was placed into takeaway containers then finally and into freezer bags, she would even give one bag to hubby and one to me as neither of us liked to share!
Now when we cook this up with our girls we like to reminisce about the fun we had and connects us to Gran's memory.
Grans Munchie Slice
1 Cup Plain Flour, 1 Cup Sugar, 1 cup of one minute oats, 1 cup of coconut, (4oz) 120 grams butter,
1 desert spoon golden syrup, 1 teaspoon bi-carbonate soda, 2 tablespoons boiling water
(You can use SR flour, l just eliminate the Bi-carb when l do this)
Method
Mix first four ingredients together, melt butter and add the golden syrup. Put bi-carb soda in cup, pour tablespoons of boiling water onto the bi-carb. While still fizzing add to hot butter and syrup then mix into dry ingredients.
Place mixture into a slice pan and bake in moderate oven (180c) 12 minutes or until golden brown.
Hints
- Too much golden syrup makes biscuits hard
- Find a good place to hide your biscuits. Enjoy!
I personally have tweaked the recipe by adding in choc chips or sultanas but shh don't tell Gran!
